Filled Lemon + Poppyseed Muffins



The sun is out (sort of), the evenings are lighter and Spring is here. In honour of this, here is the perfect Spring bake with a little bit of a twist. Each one of these muffins encase a lemon curd filling, and are topped with a lemony, sweet drizzle. Below is a five-step + easy to follow recipe, which will hopefully leave you with a dozen scrumptious muffins in well under an hour.

What you'll need:
A bowl to mix up the ingredients
A whisk (electric preferably)
Wire rack for cooling
A small bowl + teaspoon for the lemon drizzle
Papercases
Muffin tray

Ingredients:
220g self-raising flour
180g caster sugar
A lemon
3 eggs
Lemon curd/filling
100g natural yogurt
180g butter
4-5 tsp of poppyseeds
70g icing sugar

Preparation time: 10-15 minutes
Baking time: 20-25 minutes
Makes: 10-12 muffins



1. Sieve flour into a bowl, and add caster sugar, most of the poppyseeds,some lemon zest, and a squeeze of lemon juice. Mix together. Then add the eggs + yogurt and mix again.

2. Divide the mixture into 12 muffin cases half way, dollop a spoonful of lemon curd in, and cover with more muffin mixture.



3, Bake muffins at 180 degrees for 20-25 minutes. An easy way to tell if the muffins are fully cooked is by poking in a knife (not where the filling is!) and seeing if it comes out completely clean. If it doesn't, bake for a further couple of minutes.

4. Once baked, leave on a wire rack until cool. Meanwhile, mix up the icing sugar, with a squeeze of lemon juice in a bowl.

5. To finish, drizzle over the lemon glaze, sprinkle over any left over poppyseeds and grate over a bit of lemon zest.



And there you have it! Filled lemon + poppyseed muffins, topped with a zesty lemon glaze. If you're a big chocolate lover, you can change up the lemon + poppyseeds to vanilla + chocolate chips. And instead of filling the muffins with lemon curd, you can use a dollop of chocolate spread or Nutella - my boyfriend is particularly fond of this adaptation.
